This brownie recipe was given to me by chatGPT, but it is THE BEST.
Ingredients
- 210 g dark chocolate (≥52% cocoa)
- 90 g white sugar
- 60 g light brown sugar
- 60 g wheat flour
- 2 eggs
- 60 g butter
- 18 g unsweetened cocoa powder
- 1/4 tsp baking powder (slightly heaped)
- Small pinch of salt
- Vanilla sugar or vanilla extract — to taste

Making Steps
- In a hot water bath, melt the chocolate and butter together until smooth.
- In a bowl, beat the eggs and add both sugars. Whisk until the mixture becomes fluffy (2-4 minutes).
- In another bowl, mix together the flour, cocoa powder, salt, and baking powder.
- Combine all ingredients in the main bowl - first mix in the melted chocolate mixture, then gradually add the dry flour mixture.
- Cool the dough in the refrigerator for 30 minutes (if you have the patience).
- Using a spoon, form small portions with gaps between them on a baking sheet. Bake at 175°C for 8 minutes.
- Remove from oven and let cool completely, then you can easily remove them from the baking paper.
How to make them soft
1. Don't overbake (most important!)
- Bake at 170-175°C
- Time: 9-11 minutes
- Take them out when edges are just set and centers look slightly underbaked
- They will firm up while cooling but stay soft inside
2. Use more brown sugar than white (optional but great)
- You can do: 50 g white sugar + 100 g light brown sugar
- Brown sugar keeps cookies moist and chewy
3. Chill the dough (optional but recommended)
- 30 minutes in the fridge
- Helps cookies stay thick and soft
4. Don't overmix
- Mix just until flour disappears
- Overmixing = tougher cookies
5. Size matters
- Scoop tablespoon-sized balls
- Slightly flatten them before baking, unless they stick to the spoon too much. They will flatten anyway
